| Recipe: Taboulleh |

With the summer heat still upon us, lighter fare is still a go-to choice for many of us. Taboulleh is a wonderful light, healthy and easily prepared salad that can be eaten as a meal by itself or as a side dish. Bulgur wheat is the main ingredient and can be found pre-packaged in most grocery stores or in bulk at most Whole Foods or Publix stores.

bulgur wheat |
| 1 C. |
boiling water |
| 3/4 C. |
feta cheese, crumbled |
| 1 |
small cucumber, peeled, seeded and chopped |
| 1 |
tomato, seeded and chopped |
| 3 T. |
mint, chopped |
| 3 T. |
cilantro, chopped |
| 1/4 C. |
green onions, sliced thin |
| 4 T. |
lemon juice |
| 1/4 C. |
olive oil |
| |
salt and pepper, to taste |

| Directions |
|
Pour boiling water over the bulgur. Stir, cover and refrigerate until completely cool.
Add remaining ingredients. |
