Charlie's Country Buffet
Recipe: Apple-Fennel Slaw

Now that your grill has been fired up and is getting regular use, try adding our Apple-Fennel Slaw to your next meal. This recipe makes a refreshing side dish for grilled fish or chicken.

Ingredients
1/2 C. white wine vinegar
2 T. freshly-squeezed lemon juice
2 fennel bulb, thinly sliced
1/2 yellow bell pepper, thinly julienned
3 T. fresh mint leaves, thinly sliced
1/2 C. sugar
1 Granny Smith apple, peeled and thinly sliced (reserve peel)
1 celery stalk, peeled and thinly sliced
3 T. fresh chives, sliced

Directions
Bring sugar, water and apple peel to a boil. Remove from heat and chill to room temperature. Remove peel, and pour the dressing over the remaining ingredients. Toss gently to combine. Refrigerate several hours before serving.
